Banana Muffin With A Twist

I always buy a bunch of bananas but most of the time, they over ripe. I do not like to waste food so I thought of making them into muffins for my daughter and as husband's snack. I also don't want to satiate them with the plain old banana bread so I searched for other recipes to make it different this time.

I Google-d "what topping goes well with banana" and I saw this high-rated recipe from AllRecipes.com.

Before I started preparing the ingredients, I read the comments first. Most of them said this recipe is great but they did make alterations. As for me, I made the following changes:

(Batter) Original ~ Change/s Done
1 1/2 cups all-purpose flour

~ Added 1/3 cup packed brown sugar
~ Added 1 tsp vanilla
~ Added 1/2 cinammon

(Topping) Original ~ Change/s Done
1/3 cup packed brown sugar


The crumb topping really made a difference! I actually thought it wasn't a banana muffin... LOL! Just kidding! Anyway, I thought the muffin has just the right amount of moistness and it doesn't fall off when you bite it. I thought of sponge cake (mamon) when I tasted it. That's because the muffin's side is in tact and almost, but not quite, as soft as sponge cake. I wish I added crushed almonds in the batter, I will surely put a little next time. By the way, I made 14 regular-sized muffins.

So, having tried and tested the recipe, am I going to use it again? Definitely yes! I guess I already have a fan, my daughter! LOL! Seriously, you have to try the recipe and see for yourself. Just don't forget that most of the people who used the recipe made some changes or probably just added more ingredients. You may try the original recipe first and tell me how it went in the comment section.

Healthy Snack in Back-to-School Pack

I am an active House Party member and I always apply whenever they post an open application to host. I recently got accepted in to trying and sharing Udi's Gluten Free products. I am so grateful for their generosity and also because of the tried and tested the quality. I have shared in my other social medias about the other products like pizzas, granolas and bread. For this post, I am going to review what they call "muffin tops".

 
First flavor, the Udi's Gluten Free Blueberry Oat, this I'd say is my 2-year old's favorite. She actually calls it cookie, it does look like a cookie, it's just that it's soft. There are four muffin tops in a box and each is separately packed in a plastic wrap, as you can see in the photo. That's makes it perfect as kids snack for school. The bread itself is moist and soft but enough to eat with bare hands. For OCD moms, I suggest eat it with a fork if you don't want crumbs to fall. You'd want to save the crumbs because you don't want to waste the delicious treat. As for serving at home, I just unwrap them and toss in it the oven for 10 seconds, just right to not feel the coldness because I have sensitive teeth. If you want a warmer one, add more time.

The Chocolate Chia is also as soft and moist. It has some chocolate chips and the texture is more like a wheat bread. The sweetness is just right, you can eat two servings without having the need to drink water.

So having tried and tested it, am I going to continue munching on them? Yes! First, because it's a healthier option for me, and second, because my daughter liked it. :)
